Hoppin John - A New Year in Vermont!




Happy New Year!
We're having black-eyed peas once again, so I'm reposting for your pleasure. What I'm doing differently this year is serving seared scallops on a bed of BEP.

Here is a New Vermont twist on the Southern tradition of Black-Eyed Peas on News Years Day.   Just-tender peas are finished as a warm salad with bacon, onion, maple syrup and piquant spices.

Skillet cornbread dressing





This is an old family recipe from my husband's family: real Southern skillet cornbread dressing. I am reposting this because I recently made my first visit to El Dorado, Arkansas for a family event.  I was overwhelmed with the welcome I received, and the warmth and friendliness of these people;  I think their character is reflected in this recipe.  Cheers, Sue
