Then oil it all over lightly and heat it at 400F for 20 minutes... if necessary, repeat. I have a great steel crepe pan that I got in Quebec City... the instructions had me boiling a potato skin in the new pan for 20 minutes and then conditioning it as above. No idea what the point of that was... It was perfect when I found it, but I stored it with something damp, and now it has some rust...aaaargh.
